The Experience

Food, the way it should start — in the dirt

At Seedlings Farm just outside Pai, you’ll walk through the rows with Chef Moona, pick the vegetables and herbs that are actually ready that day, and bring them straight to an open-air kitchen to cook into a Northern Thai lunch.

This isn’t a staged cooking demo. It’s a small, hands-on group learning real farm-to-table cooking — how to read what’s in season, how classic Lanna flavors are built from fresh herbs and local chilies, and why growing food this way matters here in the Pai valley. Over lunch, guests are typically joined by Lyse, co-founder of Pai Seedlings Foundation, who shares the story behind the farm.

Meet at the farm gate and walk the beds with Moona — what’s growing this week, and the low-impact methods used to care for the land.

Pick what becomes your lunch

Basket in hand, harvest the vegetables and herbs for the day’s menu, and learn what “ripe” looks like for each crop.

Build classic Lanna flavors, step by step

Lemongrass, galangal, kaffir lime, dill, and Northern chili pastes — cook alongside Moona in her own outdoor kitchen, guided the whole way.

Chef Moona

Moona is the cook and gardener at Seedlings Farm. She’s spent years growing her own food and tending the land here, cooking the Northern Thai recipes she grew up with — herb-forward, chili-paste-driven Lanna flavors, built from whatever’s actually ripe that week. This session is her kitchen and her garden.

Lyse

Lyse typically joins the group at lunchtime. After 15 years living in Thailand and 10 years building social and agricultural support for local farmers around Pai, she shares the story of why the foundation exists and what it’s working toward in the community.
